Coconut Chocolate Chip Cookies

I know, I know.  It’s January 1st and you are ready to kick to junk and sugar and start fresh for the new year.   I get it.  I did my fair share of overindulging the past couple of weeks too.  BUT, I HAVE to share these with you!  They are so yummy. My kids and I whipped up a batch last night to enjoy for our New Years Eve celebration. Just file them away for later when you need to whip up a quick dessert.  I also like that these don’t make a huge batch so you don’t have dozens of cookies hanging around for days (or a night, I know, I do it too!) to tempt you.  You can easily double the recipe to make a larger batch.  Also, I’ve talked to a couple people who (GASP!) don’t like coconut!!  I know, I’m in disbelief too.  If this applies to you, just leave out the shredded coconut and these will make delish grain free, refined sugar free (besides the chocolate chips) chocolate chip cookies.



1 1/2 cups almond flour

1/2 tsp baking soda

1/4 tsp sea salt

1/3 cup shredded coconut

1 tsp vanilla

1 egg

1/4 cup melted coconut oil

1/4 cup maple syrup

1/4 – 1/3 cup of Enjoy Life Chocolate chips


Preheat oven to 375.  Mix your almond flour, baking soda, coconut and salt together in a small bowl.  In a larger bowl add your wet ingredients and mix well.  Add your flour mixture to the wet ingredients.  Once incorporated, add your chocolate chips.  Use a spoon or pastry scooper and place a tablespoon sized ball onto a parchment paper lined baking sheet.  These will keep their shape as they bake so gently use the back of a spatula or clean hands to press down on each cookie to flatten it slightly.  Bake at 375 for 10-12 minutes, until slightly browned.  Enjoy with a glass of almond or coconut milk!
